How to make real Italian eggplant parmesan

My first experience with eggplant was not a good one. I remember seeing eggplant at the store and thinking that it might actually be good. So I looked for a recipe that sounded good and went for it. The recipe was for roasted eggplant soup or something like that. All I had to do was bake the eggplant for a little while in the oven scoop out the insides blend it up and put a few seasonings in it. After just the first bite I was unpleasantly surprised at how awful the soup was. I ate a few spoonful’s and called it quits. I was convinced I would never eat eggplant on purpose again. A few years later I had my second encounter with eggplant. The second time was a different story.

A few years before my husband and I met he went to Italy for a few weeks for his sister’s wedding. They stayed near a small village where my brother in law is from and had many home cooked meals with his family. My husband explained to me how they would have several courses and there would be dozens of people eating. He was convinced they had a huge kitchen with some restaurant style appliances to be producing so much food. He went back to the kitchen to see where all the action was and was shocked when he saw how small the room was and that all the cooking was being done in a small wood-fired oven.

Our brother in laws mother did most of the cooking for them while they were visiting and my husband said she was an absolutely amazing cook. He wanted to learn how to cook something so he could make it again when he came home. After she had served some eggplant parmesan he figured that it would be the simplest to learn and to remember so he asked her to teach him. Most people would just give you the recipe and say good luck but they had a bit of a problem. He doesn’t speak Italian and she doesn’t speak English. Writing it down wouldn’t work so well, so she showed him how to do it step by step.

While we were dating my husband told me the different things he liked to cook and eggplant parmesan was one of them. When he offered to cook it for me, I was very hesitant. Not because I didn’t trust his cooking, but because I remembered my first and only experience with eggplant.  He explained every step as I watched and I still wasn’t convinced I was going to like it until I took my first bite. It was surprisingly good! Eggplant can be delicious (as long as it is cooked right)!

While eggplant parmesan is not a very popular dish it is most definitely worth trying. Make sure you plan ahead and give yourself plenty of time to make it. It is possible you could turn an eggplant hater into an eggplant lover!


2 eggplants

1 cup flour

2 eggs

¼ cup milk

1 cup Italian style bread crumbs

½ cup parmesan cheese

1 jar spaghetti sauce

8 oz mozzarella cheese, sliced

Preheat oven to 425 degrees. Peel the eggplant with a carrot peeler. Slice the eggplant into ¼ inch slices.

In one bowl mix the eggs and milk. On a plate or shallow dish mix the bread crumbs and parmesan cheese.

Coat each eggplant slice with flour, dip it in the egg mixture then into the bread crumb mixture.

Lightly coat a baking sheet with cooking spray (or use parchment paper) and lay the breaded slices on it. Bake for 15 minutes on one side, flip the slices and bake for another 15 minutes.

Reduce heat to 350 degrees. Place a light layer of spaghetti sauce on the bottom of a 9×13 pan put down one layer of breaded eggplant slices top each slice with a spoonful of sauce a sprinkle of parmesan cheese and a slice of mozzarella.

Repeat until you have 3-4 layers of eggplant. Bake for 45 minutes to an hour. Serve immediately.
